New raw recipes

Brandon was sick recently, so I took it upon myself to shove some yummy raw meals down his throat while he was incapacitated and unable to argue the point.  I'm such a great wifey.  Had he any use of his tastebuds at the time, I'm sure he would happily agree with me in saying that all the recipes are super delicious and they've completely transformed his eating habits for life. Riiiigght. 


Spanish (Cauliflower) Rice Stuffed Peppers
1 head of cauliflower, grated in food processor till rice-like consistency
4 green onions, diced (I used 1/4 white onion)
2 tomatoes, diced (squeeze out some juice so it doesn't make the dish too soggy)
1 orange bell pepper, diced
1 jalapeno pepper, diced
2 tbsp fresh lemon juice
1/4 cup cilantro, diced (I used fresh organic sprouts)
1 avocado, mashed in
1 tsp chili powder
1 tbsp paprika (or cumin)
1 tsp sea salt
1/4 cup extra virgin organic olive oil
4 red bell peppers, sliced into quarters
Mix together well and spoon into bell peppers
Serves 4

*Tip: Ease your finicky hubby into eating raw by topping with shredded cheese or even mixing with some browned organic beef for a little extra ka-pow.




Raspberry Ganache Fudge Cake (via Ani Phyo)
Cake:
3 cups dry walnuts
2/3 cup unsweetened cacao or carob powder
1/4 tsp sea salt
1 cup pitted Medjool dates

Frosting:
1/3 cup semi-soft pitted Medjool dates (soak for a few minutes)
1/4 cup agave syrup
1/2 cup ripe avocado
1/3 cup cacao or carob powder
1/2 cup raspberries

Combine walnuts, cacao and salt in food processor and pulse until coarsely mixed. 
Add dates and pulse till mixed well. 
Shape "batter" into 2 stackable cakes and set aside (I didn't have enough ingredients first time around, so I just made one layer).
To make frosting, combine dates and agave in food processor till smooth.
Add avocado and cacao till smooth.
Frost bottom cake layer, top with raspberries, stack second cake on top and frost that too.  
Serve immediately or refrigerate for couple hours to firm.



Cucumber Tea Sandwiches
*Full disclosure here, the only thing raw in this recipe is the cucumber and dill - but it's so salivatingly good I couldn't leave it out.  Also, I'm making up ingredient quantities as I go here cause I kinda just winged it in the first place - so be brave and God speed.

1 tbsp mayo
1/2 cup cream cheese (heated 45 sec in microwave till soft)
2 tbsp fresh dill
1 tbsp fresh lemon juice
3/4 tsp sea salt
Soft white bread
Cucumber

Whip together first 5 ingredients in a bowl (adjusting quantities to taste if needed). Spread mixture onto 2 slices of white bread
Thinly slice cucumber and layer between 2 slices
Trim crust and cut into small squares
Now pull up your moroccan tray table (best thrift store find ever), pour some earl grey tea, and lounge out on a fur rug in your private library whilst listening to Chopin or Debussy.  Perfecto!
