What's for dessert?


 RAW OATMEAL RAISIN COOKIE RECIPE
These aren't your average cookies, they're better!

Ingredients
1 cup raw oats
1 tsp ground cinnamon
1/2 cup Medjool dates, pitted (this is the binding agent - add more as needed to achieve a sticky "dough" consistency)
1/2 cup raisins and/or dried cranberries

Preparation
1. Combine oats and cinnamon in food processor and pulse until you get small pieces.
2. Add dates and pulse well (and hold on tight - this step turns your blender into a crazed hell bent cyclone of doom).
3. Add raisins (and/or dried cranberries) and pulse a few times just to blend.
4. Roll "dough" into bite sized balls and flatten with hand by pressing it. Serve.
5. Store in a sealed container at room temp for 1 week, or in refrigerator/freezer for much longer.

This was my first attempt at making raw desserts, and since it only took me 5 mins from start to finish, I'd call this recipe one of my new favorites. You can read more about why we like to eat raw here!
